The water wheel
The water wheel demonstrates the use made of mountain water in the north of Martinique from the 18th century onwards.
The weight of the water turned the wheel with enough force for the mill to crush the cane and extract the juice.
The Depaz wheel measures seven and a half metres in diameter and can grind three tonnes of cane per hour.
